Thanksgiving Recipes Part II

Okay, so here are the remainder of the Thanksgiving recipes PLUS photos of the macaroni and cheese casserole that my mother and I made for the holiday. There are also photos of all the other food we made…enjoy!

TASTY MACARONI & CHEESE CASSEROLE (courtesy of Cooks.com)

4 Irish Potatoes, cubed
2/3 cup Onions
2 tbsp Butter
2 tsp Salt, optional
1 box Macaroni & Cheese
1 egg
2 cups Shredded Cheese
1/2 cup Milk
1 tsp Oregano
1 tsp Italian Seasoning

Cook potatoes, 1/3 cup of onions, 1 tsp salt.
In a separate pot cook macaroni according to box with salt oregano and italian seasoning.
Mash potatoes with butter.
Combine the egg with milk.
Combine the cheese from macaroni box, along with the egg and milk mixture and some of the shredded cheese.
Combine the mashed potatoes.
Place into a baking dish and sprinkle left over cheese on top. Place in oven for 10 minutes @ 350 degrees.

VEGAN STUFFING (courtesy of Foodgeeks.com)

1 cup onions, chopped
1/2 cup onions, pureéd
2 cups celery, chopped
1 cup celery, pureéd
1 cup carrots, chopped or grated
1 lb. mushrooms, sliced
2 tbsp. dried parsely
1 tsp. Old Bay seasoning
Black pepper, to taste
Ground sage, to taste
1 lg. bag Pepperidge Farms whole wheat bread stuffing cubes (without seasoning)
1 to 2 cup Vegetable broth, as needed to add moisture
Directions:
Heat onions, celery, shrooms and spices in a large pot until it all boils. Simmer about 5-10 minutes or until the chopped onions are translucent. Cool for 10 minutes. Add stuffing mix. Mix well, adding broth if necessary for moisture. Place in a big covered baking dish and cook in a preheated 350°F oven for 30 minutes. Take cover off during last 10-15 minutes to crisp top.

BUTTER CRESCENT ROLLS (courtesy of Coffeepot.wordpress.com)

2- 1/4 ounce envelopes active dry yeast
3/4 C warm water
1/2 C sugar
1/2 C Butter, melted
2 eggs beaten
1 1/2 teaspoon salt
4 C all purpose flour
1/2 C butter softened

Proof Yeast and water in a cup for 5 minutes
Combine the yeast with the next 4 ingredients then add 2 C flour.
Stir well then gradually add the remaining flour to make a soft dough.
Turn dough out and knead 4 times then place in a greased bowl, turning to grease top of dough.
Cover and allow to rise 1 hour in a warm area.
Punch dough down and divide into 3 equal parts.
Roll each part into a 12″ circle the brush with remaining butter. Cut circles into 12 wedges and roll like you do crescents.
Place on greased sheets point side down, allow to rise about 20 minutes, bake 12 minutes in 375 degrees until puffed and brown.

The following are photos that I took throughout my mother and I’s cooking fest on Thursday. We made Macaroni & Cheese Casserole, Sweet Potatoes, Green beans & Potatoes, Stuffing, Rolls, a DUCK (which my mom affectionately refers to as “Daffy” each year) and Turkey.
